So can someone explain to me what exactly this is?

The exhaust of a liquid-propellant rocket engine, in this case a combination of  liquid hydrogen (LH2, H2), the fuel or the element that burns, and liquid oxygen (LOX, O2), the oxidizer or keeps the flames alive, which turn into energy, heat, and residue in the form of H2O, water!
